How to serve the salad
This salad makes the perfect side with a carb and a protein. Try it with a chicken kebab and some roasted potatoes. My favorite way to enjoy this cucumber, tomato, and avocado salad is accompanied with brown rice and and grilled salmon.
You could also serve it as a side dish or as a stand alone snack! This salad would be a perfect dish to bring to a summer barbecue or potluck!

How to make cucumber tomato and avocado salad
This cucumber salad is simple to make and comes together in seconds.
1. In a large bowl, add in all of the prepared ingredients for the salad: cherry tomatoes, English cucumber, thinly sliced onion, diced avocado, fresh chopped cilantro and mint.

2. Squeeze in half of a lemon, drizzle in some olive oil, and sprinkle the dried oregano, salt, and pepper over the salad. Toss gently.

Ingredient Alterations
This salad is very versatile and can be changed to your preference. Swap the red onion with green onion for a milder flavor. Add in other herbs such as parsley. You could even take this salad to another level by adding in crumbled feta cheese or mozzarella cheese balls!
What to do with leftovers
This cucumber, tomato, and avocado salad can be covered and stored in the refrigerator for up to three days.

Fresh Cucumber Tomato and Avocado Salad
Ingredients
- 1 large English cucumber sliced
- 1 pt. cherry tomatoes halved
- 1/4 red onion thinly sliced
- 1 avocado diced
- 1/2 cup fresh cilantro chopped
- 1/2 cup fresh mint leaves chopped
- 1 tsp dried oregano
- 1/2 lemon
- 2 tbsp extra virgin olive oil
- salt and pepper to taste
Instructions
